Salad can be so good… but you really need the right dressing. This is an easy and flavorful salad dressings. It can be perfect for a fast lunch time salad or as a side dish to compliment a Thai or asian inspired meal.

Typically asian and Thai cooking in particular likes to have a balance of flavors. Those flavors are umami, salty, sour, spicy and sweet. That sweet flavor can be a bit of a problem if you are on a low carb diet. In this recipe I’m skipping the palm sugar for erythritol. It works out pretty well.

To keep the salad fast and easy I just used a mixed greens blend, pre shredded carrots and bean sprouts.

Ingredients

  • 1 Lime, juiced. Approximately 2 tablespoons of lime juice.

  • 1 tablespoon fish sauce

  • 1 teaspoon Korean chili powder

  • 1 teaspoon erythritol (taste dressing for sweetness. May need more should be slightly sweet to balance lime. )

Directions

  • In a small bowl and the chili powder, lime juice, fish sauce and erythritol. Whisk together until erythritol is dissolved.
  • Pour over the salad ingredients of your choice.
