If you are on a low carb diet finding something to pair with richer dishes can be difficult. The standards of potatoes and rice are out of the question. Cauliflower rice is a great alternative and it’s super easy to make. I’ve already shared my version of cauliflower rice to pair with Indian dishes. This recipe is just a basic cauliflower rice more suitable to pair with western style slow cooked vegetables or meat like my Best Braised Short rib recipe.
What pot should you use to cook cauliflower rice?
I highly recommend using a wok to make cauliflower rice. Sometimes when making cauliflower rice, especially if you use frozen cauliflower rice, a lot of water can come out of the cauliflower. When you cook this dish in a wok you can push the cauliflower rice up on the sides of the wok and scoop out any excess water.
I like to keep my side dishes as easy to prepare as possible so I use pre riced frozen cauliflower as well as dried minced garlic. Fresh garlic can be a bit better, but it’s not always worth the trouble.
Basic Cauliflower Rice

Ingredients
2 teaspoons dried minced garlic
3 cups frozen cauliflower rice
1/2 teaspoon salt
1 tablespoon olive oil or butter
Directions
- Heat your wok over high heat. Add in either olive oil or butter.
- When the oil starts to shimmer add in the dried minced garlic and allow to cook for 30 seconds. If it starts smoking or if the butter will burn turn the head down temporarily.
- Add in the cauliflower rice and stirfry on high for about 5 min. (If water develops push the cauliflower rice up on the sides of the wok and scoop out the excess water.)
- Season with salt and serve.
